There are many stories about the origin of noodles. Two special kinds of noodles, called\u00a0<em>shui yin<\/em>\u00a0(\u6c34\u5f15) and\u00a0<em>bo tuo<\/em>\u00a0(\u998e\u9966), were included in the book Qi Min Yao Shu (\u9f50\u6c11\u8981\u672f) in the middle ancient era\u00a0<em>Shui yin<\/em>\u00a0is cooked by pulling the dough into strips as thick as chopsticks, cutting these into segments 30\u00a0cm long, soaking in a dish of water, then pressing them into flat noodles shaped as a leek leaf and cooking in a pot with boiling water.\u00a0<em>Bo tuo<\/em>\u00a0is especially smooth and delicious. In the Sui, Tang, and Five dynasty periods, there were more varieties of noodles. At birthdays, people eat\u00a0<em>longevity noodles<\/em>\u00a0(\u957f\u5bff\u9762); at the time of marriage and moving into a new house people eat noodles with gravy (\u6253\u5364\u9762), which means flavored life; on the day of lunar February 2 \u201cdragon head (\u9f99\u62ac\u5934)\u201d, people eat\u00a0<em>dragon whiskers noodles<\/em>\u00a0(\u9f99\u987b\u9762) to look forward to good weather.
